Stone Elevator

10 Drum Cleaning Machine Remove starch from potatoes

 

1: Efficient cleaning, the potato chips fall directly into the drum rinser, and the potato chips are rolled by flipping and cleaning, which is convenient for completely removing the starch in the potato chips and preventing the potato chips from sticking.

11 Bubble Washing Machine

Through the bubbles agitation, the potato chips can be rolled in the cleaning pool, impurities on the fries are remvoed effectively, keeping the chips and preventing the fries from sticking.

12 Blanching Machine

After the potato is cut into chips the polyphenol oxidase (PPO) and peroxidase (POD) inside will quickly trigger a browning reaction (oxidative discoloration). Primary blanching quickly inactivates these enzymes through high temperature (usually 70-85°C) to prevent the French fries from turning black during subsequent processing and storage.

The blanching water can wash away the free starch on the surface of the potato chips, reducing the uneven color or oil deterioration caused by starch coking during frying.

At the same time, the surface of the potato chips is slightly gelatinized, providing a uniform texture foundation for subsequent drying and frying.

15 Hot Air Dryer Machine

Use hot air to remove chips surface moisture quickly, making the chips surface dry.

2: Improve the taste, change the chips internal structure and make the texture of chips more crispy.

16 Continuous Frying Machine  

The fryer can fry the potato chips quickly in high temperature 160-180℃ cooking oil for 3-5mins, giving the potato chips the ideal taste and temperature.
